Sabbath is not mentioned in Jonah. After preaching for 40 days that God was about to destroy the city of Nineveh, Jonah became very disappointed when the people repented and God spared the city. In the passage God is saying these people were so pitiful they did not even know the difference between their right and left hands. God respected their repentance, even though the people were still very primitive and pagan in their beliefs. He also had respect for the lives of all their livestock. But Jonah was so self-centered that he could only think about his nice vine that died and that he was now looking like a false prophet. God had a lesson for Jonah. [4:10-11] And the LORD said, "You pity the plant, for which you did not labor, nor did you make it grow, which came into being in a night and perished in a night. And should not I pity Nineveh, that great city, in which there are more than 120,000 persons who do not know their right hand from their left, and also much cattle?" So God is asking Jonah, "Don't you think I should have pity on all those people and the animals?" In our culture where animals are often treated like agricultural products it is sobering to realize that God cares for their well-being.

Between their right hand and their left would indicate ,He didn't want to kill all the children and all the living creatures.Ninevah was 90 miles square it was a huge area with tons of animals and people.He just wanted Jonah to quit being so hard hearted.
Matthew Henry commentary says:

"that though they are not capable of doing him any service (for they cannot discern between their right hand and their left, between good and evil, sin and duty), yet they are capable of participating in his favours and of obtaining salvation"

In the Arabic world, there is a great emphasis on eating only with the right hand, since the left is used for baser purposes. I don't believe this passage is refering to that later concept...

If Jonah is so upset that G-d destroyed one plant, should G-d be upset over destroying 120,000 children and a lot of animals, who didn't sin?
